Final Thoughts
My experience at both locations of Sofia’s Anojitos was amazing with friendly staff who welcome you with open arms and willing to explain something on the menu you may not know what it is. Now on to the food, the quesabirria and Ramen was filled with nothing but flavor from the first bite to the last bite.
Quesabirria Tacos
The quesabirria tacos where packed full of flavor that and had very nice crispy crunch when you bit into them.

Quesabirria Ramen
This is the first time I’ve ever had quesabirria ramen before so wasn’t really sure what to suspect and has a huge fan of ramen I must say it definitely didn’t disappoint. The birria consomé with the ramen noodles and shredded birria meat overpowered it with flavor making it ridiculously good and just wanting more and more.
So, if you’re in Colorado Springs and haven’t had Sofia’s Anojitos I highly recommend you check out one of their two locations in town even if you don’t like quesabirria. They have a lot of amazing dishes along with friendly staff.
